Save seeds for next year!

Harvest, clean, and dry the seeds from your kitchen scraps—like peppers, winter squashes, or tomatoes—instead of tossing them into the trash or compost. This simple habit prevents food waste and secures free seeds for your future garden, reducing your grocery and plant-buying costs. If you do not have space to plant them, you can swap your saved seeds with neighbors or donate them to a local community seed library.

Last Friday I cleaned out my fridge and made a delicious soup from all the less than fresh, but still good veggies. Taking time to make the big pot of soup fed me for the whole weekend!

Have you ever thought about food going to waste on this scale before?

I watched Session Segment: The Science of Climate and Food Waste https://youtu.be/_FBFLXqFQLk?si=Of96b3GDQ1F8ID28.

In this session they talked about "what food waste is, where it is occurring, what is driving it, and how it impacts emissions, nature, and human well-being across the world."

Something new I learned was the difference between food LOSS vs WASTE. Looking at the supply chain from production to consumption, I was reminded that our food system produces more emissions than our transportation systems. Focusing on prevention has a higher impact than recycling when it comes to decreasing emissions.

Thinking about the full system is key. The impact of food is happening upstream on the farms. I was surprised how much deforestation is still happening to make space for agriculture. I found the chart that shows the impact of different types of food on climate compared with beef really interesting. What is wasted matters a lot! I would like to dive deeper into learning about redistribution of food to prevent waste.
