Last evening, I prepared stuffed peppers for dinner, so I gathered up all the remaining vegetables that typically fill them and cooked everything together. I then transferred that delicious veggie blend into a hotdish, which became tonight's meal.

You've made it through one complete week already—just two more to go, and we've totally got this! Let's explore some fresh strategies for keeping your vegetables and fruits at their peak for longer. We've been purchasing meat in larger quantities and using vacuum sealing to divide it into convenient, smaller portions.

Hey there! The food challenge is going awesome so far. I'm noticing the fridge is getting pretty empty as we work through this week's groceries. That's a solid sign we're actually eating what we've been buying.

Last evening, we gathered all the crisp vegetables from our fridge and whipped up a delicious garden salad—a perfect way to make the most of those odds and ends that would've otherwise ended up in the trash since there wasn't quite enough for a full meal on their own. #freshsalads

I headed to the grocery store with my list in hand, and once I'd checked off everything on it, I was ready to go. It felt great sticking to what we actually needed—no impulse buys! Plus, I loved not having to wander up and down every aisle looking for things we didn't plan to get.

It's so nice sticking to your list and being able to get in and out of the store quickly!

By shopping with a list and only buying items we need for the week we are saving money, and we are using up the leftovers in more creative ways.

I am only buying food we will eat in one week instead of two weeks at a time.

This challenge is going well, every day I take a few more tidbits and put them into my everyday living.

So far so good, I have cleaned out my refrigerator and tossed expired items out and I am more aware of the items I need to use up before the expiration date.
